Udang Goreng Renyah (Fried Prawns with Spiced Crumbs)




This is another way of serving prawns, we do like fried foods, might not good for the health, just consume in moderation it should be fine.....

500 gr Udang kelong, bersihkan sungut dan belah tengah
                  Large prawns, leave the shell on, just make a slit in the back
500 ml minyak goreng
                 Cooking oil, for deep frying


Bumbu Yang dihaluskan / the paste

3 siung bawang putih
         Cloves garlic
3 butir bawang merah
        Shallots
2 butir kemiri
       Candle nuts
2 cm kunyit
       Turmeric or 1 tsp turmeric powder
1/2 sdt merica bubuk
       Ground pepper
1 sdt ketumbar
       Coriander seeds
1 sdm garam halus, atau sesuai selera
       Salt, or to your taste

Kremesan / for the spiced crumbs

300ml santan encer (atau air)
      Light coconut milk or just use water
2 sdm tepung sagu tani
     Sago flour, substitute with maize flour it isn't available 
2 sdm tepung beras
      Tbsp rice flour
1 butir kuning telur
     Egg yolk
1 sdt baking powder
      Tsp baking powder
1 sdt merica
       Tsp pepper
Garam secukupnya
       Salt to taste

Cara  / Preparation

Rendam udang dengan bumbu yang dihaluskan selama 15 menit, supaya bumbu meresap.
Marinate the prawn with the paste for 15 minutes

Sementara itu campurkan semua bahan kremesan, sampai merata ( tidak ada gumpalan)
Meanwhile, mix well all ingredients for the spiced crumbs, to form batter (no lumps)

Campurkan udang dan bahan kremesan 
Put together the prawns and the batter

Goreng Udang 2- 3 ekor sekali goreng dengan api sedang.
Fry the prawns 2- 3 each batch over medium heat

Masukkan kremesan disamping Udang, 3 - 4 sendok sekali goreng
Add the 3-4 spoonful of batter on the side of the prawns





Angkat kremesan dan Udang jika sudah kecoklatan .( Jika kremesan terlihat sudah kecoklatan, boleh diangkat terlebih dahulu)
